Meat out Monday again, and we have General Tso’s Vegan Broccoli stir fry, and Buffalo Cauliflower Rice bowl for dinner tonight. Shrimp can be added to both of these dishes if desired!

Fresh Roasted Beets, Carrots and Parsnips coming out of the oven for dinner. On the menu tonight we have Vegan Jambalaya, Vegan Timbales ( a layer dish with quinoa, sweet potato and avocado), Wild Maine Scallops and Asian Glazed Wild Sockeye Salmon and Bok Choy stir fry.
Corvina is a large flake white fish being server grilled and lightly blackened; not hot and spicy just very flavorful.
On the menu this evening for MEAT OUT MONDAY we have: Eggplant Cavatappi Copanata and Vegan Jambalaya!
Orzo and Feta stuffed red peppers, Blackened Corvina Sea bass, Wild Maine Scallops, Asian Glazed Sockeye Salmon over stir fry rice and veggies and Cavatappi Caponata with grilled eggplant, artichoke and parmesan on the menu tonight!

Vegan ” Sloppy Jo” on a focaccia roll for lunch today! Made just the way mom made it with meatless crumble. Also on the lunch Special board today is a coconut curry stew over rice with a side salad. Brazilian Po’boy, it’s a long focaccia roll filled with grilled shrimp, roast veggies and a coconut tomato sauce with fresh basil and lettuce. Soups today are Veggie Chili, Lemon Orzo and Vegetarian Matzo ball.
